This month we review a book that shows how you can create vegan cheese that will make you forget the other stuff. A cultured cheese is often admired. But a cultured artisan vegan cheese that actually melts and delivers that familiar richness of flavor and pleasing sharpness--well, that's vegan nirvana. Ask anyone who has recently become vegan if there is any food they miss, and without hesitation, they'll say, "Cheese!
I really miss cheese! In her book Artisan Vegan Cheese she offers recipes for a raft of cheeses: traditional sharp, soft, hard, spreadable, sauces, and most of all, cheeses that melt. I have tested four recipes from the book. I made Sharp Cheddar , which was so incredibly tasty I ate it plain and on sandwiches. The Fresh Mozzarella shown in a caprese salad, above was a tiny bit grainy but definitely had that rich creamy texture of fresh mozzarella and was also delicious on hot pasta.
I loved the Alfredo Sauce : any time I am craving mac and cheese I will make it. I tried the Air-Dried Gouda , oversoaked the cashews, and had a mold problem. Totally my fault. A cautionary tale: no renovating!

And if an air-dried cheese cracks like this, it will mold inside the cracks. Very sad to put this in the compost, especially after tasting the edges. I would be happy to switch to a vegan version! I went vegan at age 16, so there are a lot of cheeses I just never got to try.
